Rustic Beef Stew with Tradition Spice Blend

Ingredients
2 pounds chuck beef, cut into 1-inch cubes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons Tradition Spice Blend
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
4 medium carrots, sliced into 1-inch pieces
4 medium potatoes, peeled and cut into 1-inch cubes
Directions
Heat olive oil in a large Dutch oven or heavy pot over medium-high heat until shimmering, about 2 minutes.
Season the cubed chuck beef with salt and black pepper. Add half of the beef to the pot, searing until browned on all sides, about 5-7 minutes. Remove the beef and set aside. Repeat with the remaining beef.
Add the diced onion to the pot, cooking until softened and translucent, about 4 minutes. Stir in the minced garlic and cook until fragrant, about 30 seconds.
Sprinkle the Tradition Spice Blend over the onions and garlic, stirring to combine, and cook for another minute to release the flavors.
Pour in the beef broth, scraping the bottom of the pot to release any browned bits, which adds flavor.
Return the seared beef to the pot, and add the sliced carrots, cubed potatoes, and bay leaf. Bring to a gentle simmer, then reduce heat to low and cover the pot.
Let the stew simmer for about 1.5 to 2 hours, or until the beef is fork-tender and the vegetables are cooked through. Stir occasionally to ensure even cooking, and adjust seasoning if necessary.
