Ohana Volcanic Legend Huli Huli Chicken

Ingredients

    • 4 lb boneless chicken thighs, or bone-in; cook longer

    • ½ cup packed brown sugar, light or dark

    • ½ cup ketchup

    • 1 cup canned pineapple juice, not fresh

    • ½ cup soy sauce, or tamarind

    • 2 Tbsp Worcestershire sauce

    • 2 Tbsp apple cider vinegar

    • ½ tsp minced fresh ginger

    • 4 cloves minced garlic

    • 1½–2 tsp Volcanic Legend, start with 1½ tsp if you want medium heat; 2 tsp if you want it clearly “volcanic”

    • Fresh pineapple slices, for grilling

    • Oil, for the grates

    • Sliced green onions, for garnish

    Directions

    1. Whisk brown sugar, ketchup, pineapple juice, soy sauce, Worcestershire, vinegar, ginger, garlic, and Volcanic Legend until smooth.

    2. Reserve ½ cup of the marinade for basting. Refrigerate it separately.

    3. Add chicken to the remaining marinade. Coat well. Refrigerate 4–6 hours or overnight. Don’t go much past 24 hours or it can get too salty from the soy + the blend.

    4. Pull the chicken out 20–30 minutes before grilling so it’s not ice-cold.

    5. Heat the grill to medium. Oil the grates.

    6. Grill about 6 minutes on the first side, flip, cook ~3 minutes. Baste with the reserved marinade, flip, and keep turning and basting 1–2 minutes per side until cooked through (thighs are nicest around 185°F). Total time is usually 15–16 minutes for boneless thighs.

    7. Grill pineapple rings until marked. Rest chicken 10 minutes. Slice, garnish with green onions, serve with the pineapple.

    8. Oven option: 375°F, single layer, ~25 minutes. Brush with reserved marinade, add pineapple, broil 2–3 minutes to caramelize.
