Ingredients

3 cups cooked hot white rice, day-old is fine

1½ lb ground beef, 80/20
1½ tsp Ohana Spice Legend
½ tsp Ohana Spice Tradition
½ tsp kosher salt, (Legend is not very salty)
½ tsp Worcestershire
1 tsp oil, for the pan

2 Tbsp butter
2 Tbsp all-purpose flour
½ small onion, minced (or 2 Tbsp onion already in the blends’ flavor)
2 cups beef broth
1 Tbsp soy sauce
1 tsp Worcestershire
1½ tsp Ohana Spice Tradition
¾ tsp Ohana Spice Legend
¼–½ tsp Volcanic Legend, Optional heat
Black pepper, to taste
Splash of the beef pan drippings

Directions
Mix beef with Legend, Tradition, salt, and Worcestershire. Form 4 loose patties (don’t pack them tight). Sear in a hot skillet with oil, 3–4 minutes per side, until browned with a pink center if you like them juicy. Set aside; keep the browned bits in the pan.
In the same pan, melt butter with the drippings. Soften the onion 2 minutes. Sprinkle in flour and cook 1–2 minutes until it smells nutty and turns light brown. Whisk in broth, soy, and Worcestershire. Stir in Tradition first, then Legend. Simmer 4–6 minutes until it coats a spoon. Taste. Tradition should read as smoky paprika and herbs; Legend should add chili-garlic depth without making it a chili gravy. Add Volcanic Legend only if you want a kick. If it tastes thin, reduce 1 more minute. If too thick, splash in broth.
Assemble: Rice in the bowl. Patty on the rice. Egg on the patty. Ladle gravy over everything so it hits rice, beef, and yolk.
