1 pound mahi mahi fillets, skinless
2 tablespoons Legend Spice Blend
2 tablespoons olive oil
blank
1 cup mango, diced
1 small red onion, finely chopped
1 jalapeño seeded and minced
1 lime juiced
1 teaspoon cilantro, chopped
blank
1 cup cabbage, shredded
8 small corn tortillas
Directions
Preheat your grill to medium-high heat (about 400°F/200°C).
Rub the mahi mahi fillets with olive oil and sprinkle both sides generously with the Legend Spice Blend, ensuring they are evenly coated.
Place the mahi mahi on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
While the fish is grilling, prepare the mango salsa by combining diced mango, chopped red onion, minced jalapeño, lime juice, and chopped cilantro in a bowl. Mix well and set aside to allow the flavors to meld.
Once the mahi mahi is done, remove it from the grill and let it rest for a couple of minutes. Then, slice it into bite-sized pieces.
Warm the corn tortillas on the grill for about 30 seconds on each side until pliable and slightly charred.
Assemble the tacos by placing a generous portion of grilled mahi mahi onto each tortilla, topping it with shredded cabbage and a scoop of mango salsa.
