Recipe: Maple, Bacon and Onion Marmalade Beef Tri-Tip


  • 1 (2-3/4 lb) beef tri-tip
  • Ohana Legend

Onion Marinade:

  • 2 strips thick applewood smoked bacon; diced
  • 2 tablespoons butter
  • 2 large red onions, chopped
  • 1 tablespoons apple cider vinegar
  • 1 teaspoon fresh lemon juice
  • 1/3 cup applesauce
  • 2 tablespoons pure maple syrup
  • fresh lemon thyme sprigs, optional


Sprinkle tri-tip with seasoning and allow to sit at room temperature for 30 minutes. Heat oven to 375 degrees F. To make the marmalade, fry bacon for 1-2 minutes (do not crisp). Drain fat and add butter, onions, vinegar and lemon juice. Simmer on low (stirring occasionally) for 10 minutes. Stir in applesauce and maple syrup and cook an additional 5 minutes. Spread marmalade over the top of the beef and roast for 20 minutes. Turn oven down to 325 degrees and roast for another 20-25 minutes (medium-rare). Rest meat for 5-10 minutes before slicing cross-grain.

Sprinkle with lemon thyme, if desired.
