Recipe: Good Luck Irish Stew
- 1 pound beef cubes*
- Ohana Kona Coffee spice
- 1/2 cup flour
- 1/4 cup corn oil, divided
- 1 chopped onion
- 1/3 cup dark Irish stout (beer)
- 2 (10.5 oz) cans beef cosumme**
- 1 (28 oz) can diced tomatoes (do not drain)
- 8 baby potatoes
- 12 baby carrots
Heat oven to 325 degrees F. Sprinkle beef cubs liberally with Ohana Kona spice then dredge with flour (shaking off excess). Heat 1 tablespoon oil in a large Dutch oven and saute onion for 3-4minutes, stirring frequently. Using a slotted spoon, transfer onions to a small plate. Add remains oil and fry beef cubes to brown, Returns onions to pot along with beer and beef consumme.
Stir well then cover and place in oven for 2 hours, stirring occasionally. After 2 hours, add the potatoes and carrots; cook an additional 2 hours at 300 degrees F. Be sure to stir the stew occasionally.
*Use cuts from either the front shoulder or the rear end.
